This is my breakfast every single day. A perfect Poached Egg (I’m a pro now!) with delicious vegetables. It is the little extras from Zest and Zing that make this the most delicious recipe. At the same time I cook my apple to eat straight afterwards.
Donna’s Poached Egg and Vegetables
White vinegar (a good splash)
1 fresh egg
Zest and Zing Asafoetida, Garlic Chilli
100g Vegetables (whatever you like, I use tomatoes, mushrooms, courgettes)
Method Poached Egg:
Fill a shallow saucepan and bring it to a simmer with bubbles
Add white vinegar (a good splash)
Crack the egg straight in
Leave it to cook for 3-4 minutes
Gently use a spatula to flick the sides and keep the shape
Add Olive oil in a small frying pan
Slice your vegetables finely
Add Zest and Zing Asafoetida, Garlic Chilli
Season with salt
Fry lightly for 5 mins on medium heat and keep turning
Plate your vegetables
Add fresh dill and chives and salt to finish
